Building a Brewery 3: Setting up the brewery infrastructure

After getting rid of everything we didn’t need from the space, the building works could finally start! We only had a few weeks before the brewing equipment arrival and there was a lot of preparation needed before.

First thing, a proper brewing floor. One able to handle everything used during the brewing and cleaning process: water, steam, hot caustic and acids. So, after drilling a few quite big holes for the drains, with 9 tons of sand and cement we created the perfect

floor slope. After tiling, sealing and grouting we had what we needed for our brewkit and vessels!

Next steps: adjust the ventilation system, in order to vent out the steam from the brewing process and the CO2 from the fermentation.

Then more drilling, big holes to provide the brewkit with steam, compressed and sterile air, hot and cold water, brewing liquor, CO2 and glycol. Not that easy, considering that the floor is thick and filled with floor heating, drainpipes and electrical cables - of course we hit one of each… which explained why we suddenly had water coming out of the electric plugs and ceiling lights.

Still, we survived! Thanks to all the workers who supported us during this phase and to our great electrician who, besides fixing all those issues, also helped us connecting the boiler to the electrical distribution board with a 60m long cable that we had to pull through 3 floors with our bare hands, quite a bit of effort and lots of sweat.

But here we are, ready for the brewing equipment!
